Dinner in 20ish Minutes: Vegan/Vegetarian Pizza

This pizza is one of my favorites because of how quick and delicious it is – perfect for a weeknight dinner.

You need:

  • Daiya mozzarella cheese*
  • Daiya cheddar cheese*
  • Pesto (optional if you want it to be vegan)
  • 1 Field Roast Italian sausage link
  • Red bell peppers
  • Pre-washed arugula and spinach mix
  • Tomato sauce
  • 1 pre-made pizza crust (for gluten-free, try a rice crust!)

*If you haven’t tried these yet, you are in for a real treat. I promise it’s good!!

What to do:

  1. Pre-heat oven to 350 degrees
  2. Chop bell peppers
  3. In a small frying pan, heat up 1 tsp of oil on medium heat. Crumble the italian sausage and cook till completely warmed through; Set aside when finished.
  4. Slather desired tomato sauce on pizza crust (My husband and I are not conventional so we also combine it with the pesto)
  5. Sprinkle desired amount of both cheeses on the pizza
  6. Sprinkle italian sausage crumble evenly on the sauce
  7. Distribute spinach and arugula leaves
  8. Add bell peppers on top
  9. Place onto a baking dish or pizza pan
  10. Bake anywhere from 8-15 minutes (or until your preferred crispness)
